Aunt Elsie's Cheesy Macaroni

Prep time: 15 Minutes
Cooking time: 10 to 15 Minutes
Baking time: 15 to 20 Minutes
Servings: 4
2 c medium elbow macaroni
salt
2 T butter or margarine
2 c shredded sharp cheddar cheese (8 oz)
1/2 t each seasoned salt & seasoned black pepper
1 t Dijon mustard
2 T chopped parsley
2 eggs
1 c milk
cherry tomato and cucumber slices for garnish (optional)
Cook macaroni in boiling salted water for 10 to 15 min. or until aldente. Drain. Add butter, stirring until melted. Stir in cheese, seasonings & parsley. Turn into greased, shallow 1 1/2 qt. baking dish. Beat eggs and milk until combined. Pour over mixture. Bake at 425 for 15 minutes or until almost set. If you like, you can make a "face" by using cherry tomato halves and trimmed cucumber slices.
For 2 servings, half the recipe and use 1 quart baking dish
For 8 servings, double the recipe and use 2 quart baking dish
