
This was another great hit with the kids. I don't like to take a lot of time to make dinner. And this is a little time consuming. But the results are well worth waiting for.
This recipe is good for about 8 potatoes:
Potatoes
2 Sticks of Butter
1 cup Sour Cream
2 cup Cheddar/Jack Cheese (divided)
1 cup of Bacon Bits(I used and LOVED Hormel Crumbled bacon bits and I put the whole packet in)
1/4 teaspoon Lawry’s Seasoned Salt
Black Pepper
milk (enough to make the potatoes creamy)
Green Onion (optional)If you plan on freezing the potatoes DO NOT add the green onions as they will turn.
Wash, then place eight baking potatoes on a cookie sheet. Do not cover them with foil as we want the shell somewhat hard. Bake in a 400 degree oven for 1 hour, 15 minutes, making sure they’re sufficiently cooked through.
When done...carefully hold a potatoes with a thick cloth(dish towel) and cut lengthwise. With a large spoon carefully scoop out the potato leaving a thin layer on the skin...add scooped portion to the mixing bowl with everything else except for one cup of cheese. Mash together.
When all mixed ....top with remaining cheese. Bake at 350 for 20 minutes.
Can keep refrigerated (Prior final bake step) for up to three days.
