Bird of Paradise Cake ( Dutch Oven Cake)

3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/2 cups salad oil
1 1/2 teaspoons vanilla
1 cup crushed pineapple
1 can (11 oz.) mandarin oranges
1 cup chopped nuts
2 cups chopped bananas

In a large bowl, combine dry ingredients. Add eggs and oil and stir until moistened. Do not beat.
Stir in the rest of the ingredients. Grease and oil a 12 inch Dutch oven (or line Dutch oven with heavy duty foil). Pour in batter. Bake at 350 degrees(7 to 10 coals under, 14 to 18 on lid) for about an hour. Invert cake onto a tray and frost with Cream Cheese Frosting. Substitute strawberries or peaches for the fruit.

Cream Cheese Frosting
1 package (8oz.) cream cheese 1 teaspoon vanilla
4 tablespoons butter, softened 2 to 2 1/2 cups powdered sugar

Beat cream cheese, butter and vanilla together until well blended. Add enough powdered sugar to make a good spreading consistency. Add a small amount of orange juice or milk to thin if necessary.
