Makes 8 servings
1 pound ground beef
1/2 cup sliced green onions
1 medium clove garlic, minced(I buy a jar of minced garlic from Costco LOVE IT!!)
2/3 cup chopped water chestnuts
2/3 cup chopped red bell pepper
1 tablespoon soy sauce
2 tablespoons hoisin sauce
2 tablespoons chopped fresh cilantro
1 or 2 heads leaf lettuce, (separated into leaves)
Brown ground beef in medium skillet. Drain. Add onions and garlic. Cook until tender. Stir in water chestnuts, red pepper, soy sauce, and hoisin. Cook, stirring occasionally, until red pepper is tender and most of liquid has evaporated. Remove from heat.
Stir in cilantro. Spoon ground beef mixture onto lettuce leaves. Sprinkle with additional hoisin sauce, if desired. Wrap lettuce leaf around ground beef mixture to make appetizer bundle.
TIP: You can thinly slice your green onions and use them to tie your bundles.
