2 1/2 c. uncooked macaroni
4 T. butter
1/4 c. flour
1 t. salt
1 t. sugar
2 c. milk
8 oz. Velveeta (cut into small cubes)
1 1/3 c. small curd cottage cheese
2/3 c. sour cream
2 c. shredded cheddar cheese
Cook noodles according to directions; drain. In saucepan, melt butter. Stir in flour, salt and sugar until smooth. Gradually add milk. Bring to a boil and cook and stir for 2 minutes. Reduce heat, add Velveeta and 1 c. cheddar. Stir until melted. Add cottage cheese and sour cream. Add drained noodles. Mix together and pour into a greased 9x13. Sprinkle with remaining cheddar over top. Bake at 350 for 30 min.

Alright ladies....I made this tonight along with rib eye steaks, steam veggies and string onions....SO GOOD!!! I was hesitant with the whole cottage cheese thing....and I'm not a HUGE fan of mac and cheese at all. But this is a keeper for sure. We had friends over for dinner and they enjoyed as well. So a great dish for a gathering.
